Apple Almond Muffins

INGREDIENTS:

1/2 cup sunflower flour (almond would work too)
1/2 cup gluten free oat flour (ground up oats)
1 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1/4 tsp salt
1 1/2 ripe bananas
1/4 cup Forty Thieves Smooth Almond Butter
2 eggs (or flax eggs for vegan)
2 tbsp coconut oil melted
1/4 cup pure maple syrup
1 tbsp apple cider vinegar
2 apples peeled and grated

METHOD:

  1. Preheat oven to 180 degrees. Line a medium muffin tray with 10 cupcake liners.
  2. Add all dry ingredients (sunflower flour, oat flour, baking powder, baking soda, cinnamon and salt) into a medium mixing bowl and whisk together.
  3. In a large bowl, mash banana into a puree. Add all other ingredients (except apple) and whisk to combine.
  4. Add dry ingredients to the wet and gently stir.
  5. Add the grated apples into the mix and fold together.
  6. Divide your batter evenly among the liners and place into the preheated oven.
  7. Cook for about 25 minutes, until skewer comes out clean.
