INGREDIENTS:

240g Raglan Food Co Vanilla Coconut Yoghurt

2 tbsp Forty Thieves Peanut Butter Crunchy

3-4 large strawberries, sliced

120g dark chocolate, chopped small

1 tbsp coconut oil

2 tbsp freeze-dried strawberries, optional

METHOD:

  1. Line a freezer-safe tray with parchment paper.
  2. In a small mixing bowl, whisk the yoghurt and peanut butter together.
  3. Scoop the mix onto the tray, making small rounds of yoghurt. Top with peanut butter and a slice of strawberry.Place in the freezer to set.
  4. Add the chocolate and coconut oil to a heatproof bowl and microwave until melted.
  5. Remove the frozen rounds from the freezer. Use a palette knife or spatula to remove the yoghurt rounds from the tray and dip each into the chocolate, covering all sides, allowing the excess to drip off. Place back on the tray and decorate with freeze-dried strawberries.
  6. Place in the freezer again until set.
  7. Enjoy straight away or keep them in the freezer for 1 month.
