No-Bake Peanut Butter Protein Bars

These no-bake Peanut Butter Protein Bars are chocolatey, nutty and seriously satisfying! Made with Forty Thieves Peanut Butter and Two Islands Vanilla Protein Powder.

INGREDIENTS:

150 g Two Islands Vanilla Protein Powder
200 g Forty Thieves Peanut Butter Not-Too-Smooth
100 g coconut flour
1 tsp ground cinnamon
2 tbsp maple syrup
125 mL water plus extra if needed
150 g dark chocolate broken into pieces
1 tsp coconut oil

METHOD:

  1. Line a 20cm square tin with baking paper. In a large bowl, stir together the protein powder, coconut flour and cinnamon. In a separate bowl, whisk the peanut butter and maple syrup until smooth. Add to the dry ingredients along with the water, mixing until a thick dough forms. If the mixture is too dry, add an extra splash of water.
  2. Press evenly and firmly into the prepared tin. Refrigerate for 30 minutes until firm.
  3. Once firm, slice into bars using a sharp knife. Melt the dark chocolate and coconut oil in a heatproof bowl set over a small saucepan of simmering water, stirring until smooth.
  4. Dip each bar halfway into the chocolate, letting the excess drip off. Place on a tray lined with baking paper and sprinkle with chopped peanuts and a little sea salt. Refrigerate for 30 minutes or until set.
