INGREDIENTS:

Base:
5x Justine’s Peanut Butter Protein Cookie Bars, crumbled
¼ cup coconut oil, melted

Filling:
1 cup Forty Thieves Peanut Butter Smooth
¼ cup maple syrup
¼ cup coconut oil
½ cup boiling water

Topping:
100g dark chocolate, melted
1 tbsp coconut oil (optional, for smoother topping)

METHOD:

  1. Line a loaf tin with baking paper.
  2. Combine crumbled protein cookie bars with melted coconut oil. Press firmly into the base of the tin.
  3. In a bowl, mix peanut butter, maple syrup, and coconut oil. Add boiling water and stir until smooth and well combined.
  4. Pour filling over the base and smooth it out with a spoon.
  5. Melt dark chocolate (with coconut oil, if using), then pour over the filling layer.
  6. Place in the fridge for 1-2 hours, or until set.
  7. Slice into pieces and enjoy.
