These grilled chicken satay tacos are fresh, zesty and full of flavour! Made with Lucky Taco Cumin Chilli Lime Marinade and served with a creamy satay sauce using Forty Thieves Crunchy Peanut Butter.
For the satay sauce
3 tbsp Forty Thieves Crunchy Peanut Butter
1 tbsp soy sauce
1 tbsp maple syrup or honey
1 tbsp lime juice
1–2 tbsp warm water (to thin)
To serve
Warm tacos
Fresh coriander
Lime wedges
METHOD:
In a bowl, coat the chicken with the cumin chilli lime marinade. Cover and marinate for at least 30 minutes, or overnight for deeper flavour.
Thread the marinated chicken onto skewers.
Heat a BBQ grill or pan over medium-high heat. Cook the skewers for 10–12 minutes, turning occasionally, until the chicken is cooked through and lightly charred.
While the chicken cooks, prepare the satay sauce. In a bowl whisk together the crunchy peanut butter, soy sauce, maple syrup, lime juice and warm water until smooth and creamy.
Warm the tacos in a pan or oven.
Serve the grilled chicken skewers with warm tacos, drizzle with satay sauce and finish with fresh coriander and lime wedges.
