Grilled Chicken Satay Tacos

These grilled chicken satay tacos are fresh, zesty and full of flavour! Made with Lucky Taco Cumin Chilli Lime Marinade and served with a creamy satay sauce using Forty Thieves Crunchy Peanut Butter.

INGREDIENTS:

500 g chicken breast or thigh, cut into strips
3 tbsp Lucky Taco Cumin Chilli Lime Marinade
8–10 wooden skewers

For the satay sauce
3 tbsp Forty Thieves Crunchy Peanut Butter
1 tbsp soy sauce
1 tbsp maple syrup or honey
1 tbsp lime juice
1–2 tbsp warm water (to thin)

To serve
Warm tacos
Fresh coriander
Lime wedges

METHOD:

  1. In a bowl, coat the chicken with the cumin chilli lime marinade. Cover and marinate for at least 30 minutes, or overnight for deeper flavour.
  2. Thread the marinated chicken onto skewers.
  3. Heat a BBQ grill or pan over medium-high heat. Cook the skewers for 10–12 minutes, turning occasionally, until the chicken is cooked through and lightly charred.
  4. While the chicken cooks, prepare the satay sauce. In a bowl whisk together the crunchy peanut butter, soy sauce, maple syrup, lime juice and warm water until smooth and creamy.
  5. Warm the tacos in a pan or oven.
  6. Serve the grilled chicken skewers with warm tacos, drizzle with satay sauce and finish with fresh coriander and lime wedges.
