Nutty Chicken Sweetcorn Tacos

INGREDIENTS:

300g Chicken Thighs
1 tsp Smoked Paprika
½ tsp Ground Cumin
¼ tsp Chilli Flakes
¾ C Corn Kernels drained ⅛ Red Cabbage fi nely shredded ½ Carrot grated ½ Handful fresh coriander ¼ Lime juiced 4 Small Tortillas ½ Spring Onion Sliced

Peanut Sauce

1 ½ tbsp Smooth Peanut Butter
¼ Lime Juiced
½ tbsp Soy Sauce
½ tsp Honey

METHOD:

  1. Heat the olive oil in a large frying pan over medium-high heat. Add the chicken strips and sprinkle over the smoked paprika, cumin and chilli fl akes. Season with salt and pepper and cook for 6–8 minutes, stirring occasionally, until golden and cooked through.
  2. Push the chicken to one side of the pan and add the drained sweetcorn. Cook for 3–4 minutes until lightly charred and warmed through, then toss together with the chicken.
  3. In a bowl, combine the shredded cabbage, grated carrot and coriander. Season with salt and pepper and squeeze over the lime juice, tossing well to create a fresh lime slaw.
  4. In a separate bowl, whisk together the peanut butter, lime juice, soy sauce, honey and enough warm water to create a smooth, drizzleable sauce.
  5. Warm the tortillas in a dry pan or microwave. Spoon the chicken and sweetcorn mixture into each tortilla, top with the lime slaw and drizzle generously with the peanut sauce. Sprinkle with spring onion and serve immediately.
