Carrot & Raisin Muffins

Made with our creamy Almond Butter, these Carrot & Raisin Muffins are bursting with flavor and goodness in every bite.

INGREDIENTS:

1 1/2 cup GF Flour
1/3 cup coconut sugar
2 tsp baking powder
1/2 tsp cinnamon
2 medium bananas mashed
1 medium carrot, grated
1/4 cup raisins
1/4 cup coconut milk (or milk of choice)
3 Tbsp melted coconut oil
3 Tbsp Almond Butter Smooth

METHOD:

  1. Start by preheating your oven to 160 degrees and line a muffin tray with liners.
  2. In a large bowl, combine your flour, coconut sugar, baking powder and cinnamon.
  3. In a second bowl, mash your bananas then add coconut milk, almond butter, coconut oil and grated carrot.
  4. Next, combine your wet and dry ingredients. Once mixed, fold in raisins.
  5. Spoon your mixture into the muffin tins and bake for 20-25mins or until golden.
