Vegan Buddha Bowl with Life-Changing Dressing

Ingredients

  • 3 large organic kumara (cut into bite sized cubes)
  • 400g tin chickpeas
  • 1 tsp cumin seeds
  • 1/2 tsp paprika
  • 1/2 tsp turmeric
  • 3/4 cup brown rice
  • 1/4 large cabbage (finely sliced)
  • 1/2 cup parsley (roughly chopped)
  • 1/2 cup coriander (roughly chopped)
  • 4 dried dates (finely chopped)
  • Juice of 1/2 lemon
  • 2 Tbsp toasted sesame seeds
  • 1 avocado (cut into quarters)
  • Olive oil
  • Salt and pepper

 

Life-Changing Tahini Dressing

  • 1/2 cup Forty Thieves Tahini
  • 2 Tbsp lemon juice
  • 6 Tbsp filtered water
  • 1 large clove of garlic (crushed)
  • Salt and pepper to taste

 

Optional

  • Pickled onions

 

Method 

Preheat the oven to 180 degrees fan bake. Add the kumara to a baking tray and drizzle over olive oil and a pinch of salt. On a seperate baking tray add the chickpeas, spices, some olive oil and a pinch of salt and pepper.

 

Pop in the oven to roast for 30 minutes until the kumara is golden brown and the chickpeas are nice and crispy.

 

Cook the brown rice as per packet instructions.

 

While the rice and kumara are cooking, prepare all of the other elements.

 

To make the Life-Changing Tahini Dressing, simply add all of the ingredients to a small bowl and whisk well until smooth and creamy.

 

Once the rice has cooked, allow to cool for 10 minutes and then add half of the herbs, the dried dates, 1 Tsp of olive oil and the juice of 1/2 a lemon.

 

Time to assemble! We like to add everything in little compartments in a bowl and top with the tahini sauce, some sesame seeds, the rest of the herbs and some pickled onions. Enjoy!
