1/3 cup Forty Thieves Superfood Butter
1 clove of garlic crushed
1 Tbs warm water
2 Tbs tamari or soy sauce
1 Tbs rice vinegar
1 Tbs maple
1 Tsp sesame oil
1/2 Tsp chilli flakes
1/2 a packet of soba noodles
1 cup frozen edamame beans
1/2 head of broccoli
1 spring onion sliced
1 Tbs toasted sesame seeds
Approx 4 servings
In a small mixing bowl, whisk Superfood Butter, garlic, water, tamari, rice vinegar, maple sesame oil, and chilli flakes together until smooth. Set aside for dressing.
Cook your soba noodles according to packet instructions. Once cooked drain and rinse then set aside in a large mixing bowl.
Bring a medium saucepan of water and a pinch of salt to the boil. Add edamame beans and cook for 1 minute before adding the broccoli and cooking for a further 4 minutes until it begins to tender. Drain well and add to the bowl with your cooked soba noodles.
Add the sauce to the mixing bowl and toss until the noddles and vegetables are fully coated.
Serve with spring onions and toasted sesame seeds.
