Just Bring Dessert: No-Bake PB&J Bars  

When someone says “just bring dessert,” make these! An oat base layered with creamy peanut butter cheesecake and raspberry compote. Made with Forty Thieves Peanut Butter and Goodness Kitchen raspberries.

INGREDIENTS:

Base

1 ½ cups rolled oats

½ cup Forty Thieves Peanut Butter Smooth

2 tbsp maple syrup

2 tbsp melted coconut oil (or butter)

Pinch sea salt

Raspberry Compote

2 cups Goodness Kitchen Frozen Raspberries

2–3 tbsp maple syrup (to taste)

1 tsp lemon juice

1 tbsp chia seeds (optional, to thicken)

Peanut Butter Layer

300 g cream cheese, softened

1 cup Greek yoghurt

½–⅔ cup Forty Thieves Peanut Butter Smooth

¼ cup maple syrup

1 tsp vanilla extract

Pinch sea salt

METHOD:

  1. Make the base: Pulse rolled oats in a food processor until fine (like coarse flour). Add peanut butter, maple syrup, melted coconut oil, and salt. Process until crumbly but sticking together. Press firmly into the bottom of a lined 20 cm (8″) square pan. Chill while you prepare the other layers.
  2. Make the raspberry compote: Add Goodness Kitchen frozen raspberries, maple syrup, and lemon juice to a small saucepan. Simmer over medium heat for 6–8 minutes until berries break down and thicken. Stir in chia seeds (optional) and simmer for 1–2 minutes more. Cool completely to ensure a thicker layer.
  3. Make the peanut butter filling: In a bowl, beat the softened cream cheese until smooth. Add Greek yoghurt, Forty Thieves smooth peanut butter, maple syrup, vanilla, and salt. Mix until silky and fully combined.
  4. Assemble: Spread half of the peanut butter cheesecake layer over the chilled base. Spoon on the cooled raspberry compote (reserve a little for swirling). Spread the remaining cheesecake layer on top. Dollop the reserved compote and gently swirl with a skewer for a marbled look.
  5. Chill and serve: Chill in the fridge for at least 4 hours, ideally overnight. Slice into squares using a warm knife for clean cuts.
